Looks like this is an Excel feature: when it sees a value which consists of digints only, it tries to interpret it as a number. If the number is too big to fit the spreadsheet cell, it's displayed in exponential format.

You may prefix your EAN with an apostrophe, so it will turn into: '4011100191006. This way Excel will treat the value as a string.
